Vada Pav Recipe
Vada Pav is a famous street food from Mumbai, often called the Indian
version of a burger. It consists of a spicy mashed potato filling coated
with gram flour batter, deep-fried into golden vadas, and sandwiched
between soft pav (bread rolls). It is served with tangy and spicy chutneys
such as green chutney, garlic chutney, and tamarind chutney, along with
fried green chilies. Vada Pav is a quick, delicious, and affordable snack
that represents the true flavor of Mumbai’s street food culture.
Ingredients
- For the Vada (Potato Filling)
- 3 large potatoes – boiled and mashed
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 pinch asafoetida (hing)
- 2 green chilies – finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- Salt to taste
- Fresh coriander leaves – chopped
- Juice of half a lemon
- For the Batter
- 1 cup besan (gram flour)
- ½ tsp red chili powder
- ½ tsp turmeric powder
- Salt to taste
- Water – as required to make thick batter
- Oil – for deep frying
- For Serving
- 6 pav (bread rolls)
- Green chutney
- Tamarind chutney
- Dry garlic chutney
- Fried green chilies (optional)
- Steps to Prepare Vada Pav:

Step 1: Prepare the Filling – Heat oil, add mustard
seeds, hing, green chilies, and ginger-garlic paste. Add turmeric and
mashed potatoes, mix with salt and lemon juice, then make small balls.

Step 2: Make the Batter – Mix besan, spices, and water
to make a thick batter. Dip each potato ball in the batter.

Step 3: Fry the Vadas – Deep fry until golden and crisp.

Step 4: Assemble – Slice pav, spread chutneys, place a
vada inside, and serve with fried green chili.
